Helen's Christmas Message and her favorite Cool Salad to serve Down Under at Christmas

I love Christmas! So when I was invited to write a continuity
book for Harlequin Special Edition that was set during the holidays, I jumped
at the opportunity. That’s how A Fortunes Of Texas Christmas came to be. It was
my first continuity, and I loved getting to know my characters and helping them
fall in love and share their first Christmas together.
Christmas day is usually a lazy one – a walk on the beach,
an overindulgence of food and drinks, gifts shared with family and friends. A
nice day, one that often ends with Christmas carols playing in the background
and quiet conversation as we sit in the living room and watch the lights on the
tree flicker. Writing about the holidays means I can give my characters
different experiences, which in the case of A Fortunes Of Texas Christmas,
meant my French hero could relay stories about Christmas in Paris. And
researching was fun – from ice skating to the lights on the Eifel Tower, from
wearing mittens to caroling in the street, it was a definite contrast to the
balmy and hot Australian festive season I’m used to.
I live in Australia – so the holidays are warm and the
champagne is chilled and we’re more likely to celebrate with cold ham and
seafood rather than pumpkin pies and roast turkey (although I know turkey is
often prepared).
This is my favorite summer salad! Cool and delicious and so
easy (keeping in mind that I am an average cook, so salads are a great
easy-make)
Cool Salad
1 cup quinoa
(can substitute whole grain pasta or couscous)
1 cucumber,
diced
3-4
tomatoes, diced
1 small red
onion, diced
1-2 lemons,
juiced
4 ounces
Feta cheese
Olive oil
Fresh
parsley or mint
Make the
quinoa as directed, fluff with a fork. You can also substitute whole wheat
pasta or even wheat couscous as desired. Add 1-2 tablespoons olive oil to
moisten the grain. Once cool, add diced cucumber, tomatoes and onion, along
with remaining olive oil (1-2 tablespoons) and lemon juice. Then, crumble feta
cheese and add fresh herbs. Toss to distribute ingredients, chill, and serve!
