A Favorite Christmas Recipe
It’s beginning to look a lot like Christmas—at least here in
southern Ontario. And since there’s snow on the ground, I thought I’d share a
favorite family recipe for “snowball” cookies.
Biting into one of these never fails to
remind me of Christmases past as they were always on the “goody tray” at my
grandma’s house when we visited during the holidays. I love them because they’re chewy and crunchy
and sweet—but mostly because they’re super easy to make. (Also, they can be
made in advance and frozen until needed, which is even more important this time
of year when we all seem to have so many things to do and never enough time to
do them!)
Ingredients:
1 cup chopped dates
3/4 cup sugar
2 eggs, well beaten
1 cup chopped walnuts
1 tsp vanilla
2 cups Rice Krispies cereal
1 cup flaked coconut
Directions:
1. Combine dates, sugar and eggs in 10-inch skillet.
2. Cook over medium heat, stirring constantly, until mixture pulls away from the sides
of the pan (about 5 minutes).
3. Remove from heat.
4. Stir in nuts and vanilla, then carefully stir in cereal and cool slightly.
5. Moisten hands in cold water and shape mixture into balls, about 1” in diameter.
6. Roll in coconut and place on baking sheet or tray.
7. Chill in the refrigerator to set.

DeleteThat recipe sounds so good. I haven't eaten dates since I was a kid and I've never used them in a recipe. My grandma loved them.
ReplyDeleteMy husband is not a fan of dates--but he loves these cookies because he doesn't know they have dates in them ;-)
DeleteI used to make date nut quick bread as Christmas food gifts and I loved it but I switched a few years ago to pumpkin chocolate chip bread it is really yummy.

DeleteThe Chill has made it to North Florida today.... 61 degrees... I know that must feel good up north but down here its time to pull out a jacket. We will see how long it stays chilly.
